- 1-2 Cucumbers, chopped
- 1 bell pepper, color of your choice
- 3 chopped scallions
- 1 tomato, chopped
- 2-3 TBSP chopped fresh herbs such as parsley, oregano, basil, thyme - any you have. Dried is ok too.
- Feta Cheese, crumbled
- Salt & Pepper
- Olive oil & aged balsamic
Chop all vegetables and herbs including salt and pepper. Toss. Drizzle olive oil and vinegar over the salad. Gently fold in feta cheese.
You can eat immediately, or cover and place in the fridge or an hour or so to let the flavors mingle.
