- 1 cup organic thick rolled oats
- 1 cup coconut milk
- 1 cup water
- 2 TBSP Miso paste, I like the white miso
- Bed of greens, seeds, olives, avocado or other veggies
- Smoked Salmon or Eggs cooked any way you like for topping
Stir together the oats, coconut milk, and water in a saucepan. Bring to a boil and simmer to desired consistency.
While the oats are cooking prepare your plate of greens and veggies.
When the oats are done turn off the heat and stir in the miso paste a little at a time, tasting as you go.
Top with eggs or smoked salmon and enjoy.
