Beer Boiled Shrimp

Ingredients

  • 1-2 TBSP butter
  • half an onion, chopped
  • 1/2 tsp salt
  • 1 lb. shrimp of your choice -- peeled and deveined or not
  • 1 beer
  • For the cocktail sauce:
  • Organic Ketchup in a glass jar
  • horseradish, fresh minced or jarred
  • lemon juice, fresh

Instructions

Bring your beer to room temperature so it boils quickly.

Melt the butter in a pot over medium-high heat. Stir in the onion, and cook until transparent, about 2 minutes.

Mix in the salt and shrimp, cook 1 minute.

Pour the beer over the shrimp, and simmer just until the shrimp turn pink, about another minute or so. Turn off the heat, and allow the shrimp to sit for a few minutes or up to a half hour for the beer flavor to marinate in. Serve while still warm, or cooled.

While the shrimp soak in the beer, make your cocktail sauce by mixing together all ingredients to taste. I did not put quantities on the cocktail sauce recipe because it is all to taste. I like a lot of horseradish! When not available fresh I do use jarred horseradish, but look for brands with the only ingredients of horseradish, apple cider vinegar and salt

If you get a chance to try Kauai shrimp, they are the best. They inspired me to make this recipe.
