Grab & go Lunch featuring Chicken or Fish, lettuce, and Avo

Ingredients

  • Lettuce leaves, whole
  • Cooked chicken or fish (leftover or canned salmon)
  • Mustard
  • Avocado slices
  • sprouts or chopped greens
  • Fresh squeezed lemon juice
  • Salt and Pepper to taste

Instructions

Lay lettuce leaves on your plate, put a dollop of mustard on each leaf, top with chicken or fish, top that with a little slice of avocado, top that with sprouts or chopped salad greens, squeeze some fresh lemon or lime juice over all and top with a sprinkle of salt and pepper.

Roll up and enjoy your lunch as you relax.

This can be a meal on the go, you can grab and throw all the ingredients in your bag and build this meal right at your desk or wherever you are.  A healthy and fulfilling meal for a busy day!
