Roasted Carrots

  • 1 bunch carrots
  • approx. 2 TBSP coconut oil
  • 1 tsp cumin powder
  • Salt & Pepper to taste


Preheat oven to 425o

Toss carrots with coconut oil, cumin, and salt & pepper.

Roast for 20-25 minutes.

In this meal I topped my shrimp scampi with kale and roasted carrots for extra vegetable nutrition.
