Shrimp Salad

Ingredients

  • 1 lb shrimp cooked and chopped
  • 1-2 stalks celery, diced
  • 1 small onion or scallion, diced
  • 1/4 cup basil, sliced
  • 10 kalamata olives, sliced
  • Handful of sprouts (optional)
  • 1-2 TBSP sour cream (or mayonnaise)
  • Drizzle of olive oil or pumpkin seed oil
  • 1 TBSP white wine vinegar
  • Freshly ground pepper and salt to taste
  • Bed of greens ex. arugula or spring mix greens

Instructions

Chop and prepare shrimp and veggies and place in a bowl. Add sour cream, olive or pumpkin seed oil, vinegar, and salt and pepper, stir well.

Prepare you bed of greens add a drizzle of oil and vinegar to the greens. Place shrimp salad on bed of greens and refrigerate for at least an hour before serving (if possible –but not necessary).
