Veggie Shish Kebob

Ingredients

  • Cherry tomatoes
  • Onion
  • Peppers
  • Mushrooms
  • Zucchini
  • Pineapples (optional)
  • Soy sauce
  • Pineapple juice (if using pineapple)
  • Basmati rice
  • Toasted pumpkin seeds
  • Shredded coconut

Instructions

If using bamboo skewers soak them in water 10-15 minutes or if using metal rub a little coconut oil (or other oil of your choice) on them.
 
Keep tomatoes and mushrooms whole.  Cut the other vegetables (and pineapple if using) into large chunks. Place the vegetables on skewers. Marinate in soy sauce and pineapple juice (if using pineapple).

You can grill them or place them on a cooking sheet and roast them in the oven.

Place kabobs in a broiler pan.  Put under the broiler and keep an eye on them, after about 5-8 minutes turn them over and cook another 5-10 minutes or until desired doneness.

Let rest a few minutes then serve.

Serve over basmati rice with toasted pumpkin seeds and shredded coconut.
