Ingredients

  • 1 Daikon Radish
  • Coconut and Olive oils
  • Nama Shoyu
  • 2 cloves garlic, chopped
  • 1" ginger chopped finely
  • Bed of rice for serving (optional)

Instructions

Finally! A good recipe for daikon radishes. I get them in my CSA box frequently and get tired of slaw or fermenting them. For my birthday I went to a Japanese restaurant here on the island called “Nuka”, and on the menu they had daikon steaks in teriyaki sauce. Delicious! And so good for you.

Peel your daikon radish and slice thickly. Score both sides so they cook better. Pour oils into skillet, sauté, flipping every few minutes until soft but not mushy.

While daikon is cooking, mince ginger and garlic, put in a bowl and pour soy sauce over.

When the daikon are just about done, pour ginger garlic soy sauce mixture over reserving some for after the heat is off. Sauté briefly in the soy sauce mixture then turn off heat. Drizzle remaining soy sauce over.

Remove from pan, add in a pat of butter and cooked rice, swirling the rice around in the soy sauce mixture that remained in the pan. 

Lay rice in bowl or plate and top with cooked daikon.

I enjoy this recipe with my beer boiled shrimp for protein.
